Banana and Chocolate Chip Cookies

Well, we've had a great day so far. Everything seems to have gone to plan.....

A lazy morning, followed by baking these lovely cookies. They are scrummy....Half will go to nursey and half will probably been eaten by the end of the day. I've had 3 already! Shhhhhhh....don't tell anyone.

Will nip out later to pick up some crafting goodies, a friend of a friend is having a clear out and 2 bags have got my name on......can't wait.
I've just received the blank cards today so I can get started on my friends wedding invitations, she's getting married abroad and having a reception here when they get back. Just need to finalise the layout of the front.

p.s. recipe for Cookies:

125g unsalted butter
5 tbsp demerara sugar
2 tbsp granulated sugar
1 large egg
1/2 tsp vanilla extract
1 small ripe banana, mashed
175g plain flour
1/4 bicarbonate of soda
pinch of salt
2 tbsp milk
115g good quality chocolate chips
55g walnuts (optional)

1. Preheat oven to 190C/375F/Gas 5. Cream butter & sugar until pale, light and fluffy.
2. In a separate bowl, beat the egg and vanilla extract together.
3. Add the egg mixture to the butter mixture, a little at a time, beating well between each addition.
4. Beat in the mashed banana until mixture is smooth.
5. In a separate bowl sift together the flour, bicarbonate of soda & salt and add to the mixture, carefully folding. Stir in the milk, fold in the chocolate and walnuts.
6. Drop mixture onto a lined baking tray, spaced well apart, 6 - 8 per tray.
7. Bake in the preheated oven for 15-20 minutes until lightly golden.
8. Remove from the oven and leave to firm slightly before placing on a cooling rack.
